
Pancakes gone macho!The holidays are in full swing at my house. Trees are up and decorated, gifts are bought and poised for wrapping, and we Fentons are slowly checking the classic Christmas Specials off our seasonal viewing list (If you have never seen Mr. Magoo’s Christmas Carol do yourself a favor- end the deprivation and watch it immediately). I am hugely into holiday traditions. The past two weeks were spent in my kitchen whipping up favorite yuletide treats. While it wouldn’t be Christmas without sugar cookies and egg nog, I like to keep the season fresh by creating new traditions as well. This “mancake” recipe from Betty Crocker was a total hit with my beer-&-bacon loving family, and so simple to make! Grab your Bisquick and make pancakes as usual, but substitute the water with beer and toss crumbled bacon into the mix. Easy, right? The best part is it works with all types of beer. I used our home brew chocolate stout and it was beyond delicious. If you’re serving a younger crowd, just nix the beer and keep the bacon. Surely an instant classic!
